Leftover Pork Taco Nachos

Neither my wife nor I are particularly interested in politics… but for some reason I really wanted to watch the election debates last night.  I think I was hoping for a fight to break out or one of the candidates to say or do something crazy on national television.  To me, it just feels like that type of election this year.  The plan was to make some homemade nachos right before the debate started and then sit back and enjoy the show.  It was a good plan until we realized that we hadn’t considered time zones and had miscalculated the start time by 1 hour.  Anyway, the nachos were really good and here’s how I make them:

They are pretty simple – so I won’t bore you with lots of stuff to read.  Man up and just look at the pictures and try to figure it out.  That being said, here are a couple of things to read before you get started:

  1. Preheat your oven to 375.
  2. Drain everything thoroughly.  If you don’t drain things (like meat, beans, tomatoes, etc) then your chips will end up all soggy and gross.
  3. Don’t add the lettuce and tomatoes until after you take your pan of nachos out of the oven.
