BBQ Chicken Manwiches

Having just made homemade chicken noodle soup a couple of days ago I found myself with lots of extra leftover chicken in the refrigerator.  I could have probably posted 10 different boring ideas on what to do with left over chicken, but what fun would that be? Here is a fresh, manly take on what you can do with your left over chicken.

To start, here’s what you’ll need:

 

 

 

 

 

Heat up your chicken and favorite BBQ sauce on the stovetop on medium low.  You can let your chicken and BBQ sauce heat up throughout the entire process.  You probably can even turn it down to low if your BBQ sauce begins to stick to the pan.  While that’s going on, chop up some jalapenos and cook your bacon.  Once your bacon is cooked, set it aside but keep the grease in the pan because we are going to use that same pan to cook some homemade french fries.  Cut up your potatoes something like below:

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

Season the potatos with your favorite seasonings (if you are unsure just start with some salt and pepper) and then place the potatoes back in your bacon pan.  Turn up the heat to medium high and begin to cook them.  You’ll need to watch them closely so that they don’t burn and I’d recommend just keeping the lid off – you dont need it.  If you do it right (which is subjective) they should hopefully look like mine:

 

 

 

 

 

 

 

 

 

 

 

 

 

 

By now you should have everything ready and it’s almost time to build your BBQ chicken manwich.  Before you build it, try crusting your bread on the pan you used to cook the potatoes.  It gives the bread a little crunch and takes your manwich to the next level. Build time. There’s no wrong way to assemble, so knock yourself out.  Mine looked something like this:
